Smooth, gutsy, approachable and deep at the same time – Auchentoshan Three Wood is one of Auchentoshan´s great malts.
It starts at the production of the “beer”, which is brewed from a special treated, non-peated malt. Important are the evenly milled starch grits, which support the transformation of the starch into sugars during mashing at 63,5°C.
Auchentoshan, established in 1823, doesn’t count on the consistency by using stainless steel washbacks. Today they use instead Oregon pine washbacks, which requires a lot of experience by the distillers in the following process, to guarantee constant results. But on the other hand, they give the “beer” a special character.
After that follows the triple distillation in onion shaped pot stills, which takes the beer from 8% up to 81% of alcohol. Single distillation would usually take it up to only about 70%.
By this special distillation process at Auchentoshan, all the impurities in the spirit are eliminated and so the notes of the wooden casks during the maturing period can enter into the spirit much more intensely.
And of course this also takes more time, more energy and is more expensive.
But taste the result! This is a good example, how master distillers in Scotland are making the difference and why we are ready to pay a bit more for their high-quality products.

Maturing casks
After distillation, the pure spirit is matured in various wooden barrels that are carefully selected to give the whisky its final color and taste. It takes a lot of effort and experience to combine and balance the unique flavors provided by each barrel.
Three different wooden barrels are selected for the maturation of the Auchentoshan Three Wood. First, the distillate is aged in ex-Bourbon barrels for 10 years. Then it is filled into Spanish Oloroso sherry casks for about 18 months, a sherry that comes with special spicy-sweet wood and truffle notes. And finally, the whisky is stored for almost another year in the Pedro Ximenez sherry barrels, a fruity-sweet and intense sherry.
The result of this special distillation process at Auchentoshan is a great single malt with a full taste, smooth and yet intense. The perfect dram after a long busy day!
